Super Easy Easter Chocolate Fudge Cake


Cooking time - 35 mins

Serves 4-6 people with generous slices!








This is the perfect easter recipe whilst were all in lockdown. It's super easy, delicious and quick to make, meaning you can sit with a cuppa and some cake in the sun in no time!

Cake Ingredients

150g Self raising flour

30g Cocoa powder

1tsp Baking powder

175g Caster Sugar

175g Butter (Softened)

3 Eggs

1tsp Vanilla extract

50g Melted dark chocolate

Chocolate Fudge Icing Ingredients

200g Butter (Softened)

200g Icing Sugar

200g Melted dark chocolate

Method


STEP 1

Heat the oven to 180C/fan 170C/gas 4. Line and butter 2 x 20cm sandwich tins.

STEP 2

Put all cake ingredients into the mixer, food processor or large bowl and mix until smooth. If the mix is a little stiff, add 1-2 tbsp water or milk and mix again.

STEP 3

Divide the mixture between the tins, level and bake for 20 minutes or until springy. Place the tins on a wire rack to cool.

STEP 4

Clean the food processor, mixer or bowl. Add the butter, icing sugar add chocolate, mix until combined and smooth. Once the cake is cooled ice the cake. Pop the kettle on make a cuppa and enjoy!
